Smoky tuna dip – a healthy snack

In Alaska we are pretty seafood-centric. Although we have more than 47,000 miles of shoreline my husband doesn’t like seafood so I rarely cook with it.

I have access to Alaska halibut and salmon, but sometimes I just want a good old-fashioned can of tuna. Recently I was in Mexico and a friend served up a dip made with smoked mackerel. I don’t have any smoked fish lying around my freezer so I tried my own tuna dip. With a tiny amount of liquid smoke and just a few other ingredients I came up with a smoky, delicious tuna salad that’s perfect for a mid-afternoon snack — and it’s healthy too!

I love tuna packed in oil, but that can run pretty expensive at our local fancy grocery store. The big grocery store carries the next best thing for about $2.50 a can.

You can use any can of tuna you’d like.

Ingredients:

  • 1 can of tuna
  • 1 teaspoon of chile in adobo sauce
  • 1.5 teaspoons lime juice
  • 1 tablespoon mayonnaise
  • 1 tablespoon plain, Greek yogurt
  • 1/8 teaspoon liquid smoke
  • 2 teaspoons capers
  • salt and pepper to taste

Drain the tuna and place in a small mixing bowl. Combine all the other ingredients. Serve with corn chips or crackers.

Creamed Corn Casserole – A free recipe

It was the evening before Thanksgiving and I was describing the holiday to my son while driving home from preschool. Jack asked if there would be corn at our dinner.

Our family isn’t a corn family. Occasionally when Costco is selling an eight-pack in the summertime my folks will boil it and serve it on the cob. Creamed corn is definitely not a typical dish on our table.

I looked at several recipes online for creamed corn and most called for either canned corn (gross), or fresh corn. Many recipes listed cream cheese, which I didn’t have. I wasn’t about to brave the grocery store on Thanksgiving eve so I took to my freezer and invented my own creamed corn recipe. I think it’s a hybrid of creamed corn and corn casserole. It’s a little thicker than creamed corn because of the egg, but not as custardy as casserole.

Also, my son had fun helping me make it. I put crackers in a ziploc bag and let him stomp to his heart’s content.

Ingredients;

  • 2 slices of bacon
  • 1/2 cup finely chopped onion
  • 3 tablespoons butter
  • 2 tablespoons plus 2 teaspoons flour
  • 1/2 cup cream
  • milk
  • 24 oz. frozen corn
  • 1 egg, lightly beaten
  • salt and pepper to taste
  • 1 sleeve Ritz crackers, stomped on by a child (food processor works too)

Directions:

Preheat oven to 350 degrees F. Fry up the bacon in a medium sauté pan over medium-high heat. Set aside to munch on later and reserve the bacon grease. Add 2 tablespoons of butter and sauté the onions until soft and translucent, about 5 minutes.

Add flour and stir frequently for about two minutes. Turn heat down to medium. Add cream and stir until thickened. Add milk if mixture is too thick. You want it the consistency of cream sauce. Add salt and pepper to taste.

In a large mixing bowl combine the corn, béchamel sauce and egg until the corn is well coated. Place in a casserole dish.

Wipe the sauté pan clean with a paper towel and melt 1 tablespoon of butter over medium heat. Add the Ritz cracker crumbs and stir frequently for one minute.

Sprinkle  casserole with the cracker crumbs and bake uncovered for 40 minutes or until top is lightly browned.

Fried Green Tomatoes

In our family, home is where the kitchen is. This week we are visiting family in Pittsburgh. My kid sister just moved into a cavernous brick home in Lawrenceville, coincidentally the neighborhood where my husband was born.

Her kitchen is absolutely Pinterest perfect and I couldn’t wait to cook in there.

This evening we stopped by a farmers market full of squash, zinnia bouquets, goat cheese and apple cider. We picked up some green tomatoes and made them as a light dinner.

Here’s a quick post about how my sister prepares them.

Fried Green Tomatoes

Ingredients:

Serves 4

  • 4 medium green tomatoes, sliced into 1/4 thick slices
  • 1/2 cup cream of wheat
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne powder
  • Ground pepper
  • Pinch of salt
  • 2 eggs
  • Peanut oil

In a shallow bowl, mix together the Cream of Wheat, paprika, chili powder, cayenne, pepper and salt. Whisk the eggs in another shallow bowl.

Add half a fingernail’s depth of oil to a cast iron skillet and turn heat to high.

Dredge the tomatoes in the egg and then in the breading.

When oil is glistening, add tomatoes in one layer in the pan. You may need to fry them in three or four batches.

Fry for a few minutes on each side, till browned. Place on a paper towel-lined plate. Sprinkle lightly with salt.

Serve as-is or with a yogurt dipping sauce. Recipe below:

Yogurt Herb Dipping Sauce

Ingredients:

  • 1/4 cup plain Greek yogurt
  • 1/4 cup sour cream
  • 1/8 tsp. smoked paprika
  • dash of garlic powder
  • 1 tsp. chopped fresh herbs such as oregano, basil or parsley
  • salt and pepper to taste

Mix together all the ingredients. Serve with fried green tomatoes.

I seem to struggle with basic recipes such as steaming peas and frying bacon. Green beans fall into this category.  I either undercook them or overcook them; either way they turn out not good. Welp, I finally figured it out. Slightly sweet, tangy and caramelized, these green beans were the easiest.

Ingredients:

  • 1/2 pound fresh green beans, trimmed
  • 1 Tbs. butter
  • A splash of marsala
  • Juice of 1/4 of a lemon
  • salt and pepper

Directions:

Heat a cast iron pan over high heat. Add the butter. When melted, add the green beans. Cook on high for about five minutes, stirring occasionally. Toss in the marsala and thoroughly coat the green beans. Keep cooking until beans start to brown and caramelize, about three minutes. Add the lemon juice and salt and pepper to taste. Continue cooking another few minutes until green beans are tender.

Low-carb Chicken Nuggets

I love junk food. LOVE IT. But there are lots of reasons why I shouldn’t eat it on the regular.

I’m not a big fan of diet recipes that try to emulate the real deal. Usually they lack in flavor or texture. But I’m willing to try them once in a while.

Here’s a recipe that satisfies my fast food desire: homemade chicken nuggets. Not only are they kid friendly (my son gobbled them up), but they are great for those on low-carb or gluten-free diets.

This is a great weeknight dish since they only take about 40 minutes from start to finish. Serve them with cheesy broccoli quinoa and you’ve got yourself a tasty junk-like meal.

Low Carb Chicken Nuggets

Serves 2-3

Ingredients:

1 pound of chicken tenders (chicken breast would be fine)

1 tsp. baking soda (optional)

3/4 cup almond flour

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/2 tsp. smoked paprika

salt and pepper to taste

2 eggs

Preheat oven to 400 degrees F. Line a baking sheet with foil and spray with cooking spray.

Cut your chicken into two-inch pieces. Place them in a bowl with two tablespoons of cold water and the baking soda. Let sit for 15 minutes. Drain and pat dry with paper towels. (This step is optional, but I find it makes a more tender nugget as per America’s Test Kitchen’s advice).

Whisk together the eggs in a pie pan. Combine the dry ingredients in another pie pan.

Toss the chicken pieces in the egg then gently dredge them in the almond flour mixture. Place on the baking sheet. Bake for 12 minutes, flip them and bake another 10 minutes. Remove from oven and let cool a couple of minutes before serving.

Our Thanksgiving Plans — A step-by-step guide to avoiding a festive failure

About nine years ago I had the honor of roasting the turkey for my family’s Thanksgiving dinner. Until that dinner my father was always the main chef during this holiday meal, but that year I had learned a turkey tip from a friend that I really wanted to try, so I took the responsibility from him. I remember his taking a bite of my bird and formally announcing he was passing the turkey scepter on to me; he could not make a better turkey.

This was, of course, before Alton Brown made famous the technique of brining a turkey. Now my father claims it’s the only decent way to prepare a Thanksgiving feast. I tried brining once, but it was too much effort for me. I don’t even like turkey!

So this year my parents are arriving home from Mexico on Thanksgiving Day. What with their being old and tired (no offense mom and dad!) I don’t want them to have to cook anything, so I’m taking on the entire meal, fixings and all. I’m even going to try to decorate — but we’ll see how it goes.

I thought I would share my plans for next week in case you are feeling completely uninspired (which I am currently feeling).

How to Cook Perfect Beans

Taco night is always a big hit in our family and one of the most requested ingredients from our son is beans. Sure, canned beans are convenient and inexpensive, but there’s often a bit of sodium in them and when you reheat them, they can easily be overcooked.

Many are hesitant to cook dry beans due to lack of experience and convenience, but with a little planning and minimal effort, you can easily cook creamy, flavorful beans to accompany many food genres. And they are much cheaper than canned beans!

Perfect Beans

Makes about 3 cups

Ingredients:

One cup of dried beans such as pinto, great northern or black

1 Tbs. salt

water

Directions:

The morning you want to have beans for dinner, toss your dry beans into a mesh strainer and rinse with cold water. Add beans and salt to a medium saucepan. Fill with water so pan is about 2/3 full. Cover and let sit all day, about 7-9 hours.

Put pan on stove, still covered, and bring to a boil. Reduce heat and gently simmer beans for 1.5-2 hours. Be sure it’s not at a full rolling boil as the beans can get torn up if overly disturbed. Drain and serve.

*Beany tidbit: If your beans appear shriveled after soaking them it means they are past their prime. They will still taste all right but you may want to buy new beans next time.

Creamy Potato Salad

We’ve been having an unusually sunny and warm May, which means it’s time for BBQ food. No BBQ is complete without creamy potato salad. This recipe was inspired by one from Cook’s Country Magazine where they incorporate an egg yolk into the dressing. I’m not usually a fan of hard-boiled eggs mingling with my potato salad, but this time it turned out surprisingly well.

I know everyone has a “method” to cooking perfect hard-boiled eggs. My method is to cover the eggs with cold water and pour in a couple of teaspoons of baking soda. Cover and bring to a boil. Uncover and boil for 11 minutes. Then immediately drain and cover with icy cold water. Not only are the yolks perfectly cooked, but the eggs peel easily too.

Creamy Potato Salad

Serves 4

3 medium yukon gold potatoes, cut into 1-inch cubes

2 hard-boiled eggs, one yolk reserved

2 Tbs. apple cider vinegar

2 tsp. agave nectar or honey

1/2 a celery rib, minced

2 green onions, minced

2 pickles, diced

1/4 cup greek yogurt

2 Tbs. mayonnaise

salt and pepper to taste

 

Directions:

Toss your diced potatoes into a large pot and cover with water. Add a couple of pinches of salt, cover and bring to a boil. Turn down the heat and simmer till potatoes are just tender — about 8 minutes.

Meanwhile, whisk together the vinegar, agave nectar, and the yolk from one egg. Drain the potatoes and transfer to a bowl. Pour over half the dressing and gently toss to coat. Refrigerate for 30 minutes.

Add the remaining eggs to the remaining dressing and thoroughly mash till the egg whites are small chunks. Add the celery, green onions, pickles, yogurt and mayo. Once the potatoes are cooled, add the remaining dressing. Add salt and pepper to taste. If you prefer your salad even creamier, add a little more mayo.

Braised Red Cabbage

Around my birthday last month I went to the garage to find something in the chest freezer only to see it full of Omaha Steak Company boxes. Turns out my mother-in-law sent us five meaty meals to cook up with very little prep. One hunk of meat was corned beef brisket. Mmm…corned beef with mustard and cabbage.

I prefer red cabbage not only for its vibrant color, but it’s packed with tons more vitamin A than green. I once had Thanksgiving with a Hungarian guest. She brought a red cabbage dish that was tangy and sweet. She said it was a traditional recipe in her country.

I never got the recipe, but I decided to use Bon Appétit’s as a guideline. The dish was tender, tangy and sweet, just as I anticipated. The julienned granny smith apple rounds out the flavors. This braised red cabbage went perfectly with our corned beef and mashed potatoes.

Braised Red Cabbage

Prep time: 10 minutes

Cooking time: 40 minutes

Ingredients:

2 Tbs. olive oil

1/2 head red cabbage, cored and sliced

1/2 onion, chopped

2 cloves garlic

3/4 cup chicken broth

1/4 tsp. allspice

2 tsp. sugar

2 Tbs. apple cider vinegar

1 granny smith apple, cut into matchsticks

salt and pepper to taste

 

Directions:

Heat olive oil over medium-high flame in a large pan. Add the onion and garlic and cook till onions are soft and starting to brown, about 8 minutes. Add the cabbage, salt, pepper, allspice, and sugar and toss to evenly coat with oil. Cook till cabbage is wilted, about 5 minutes. Add the stock, cover and turn down the heat. Simmer for 15 minutes. Add the apples and vinegar, recover and simmer another 15 minutes.

Cranberry Cornbread Stuffing

My sister just cleared out her garden and gave me a gallon bag of fresh sage. In my pursuit to use some of it before drying it I found a great recipe on Foodnetwork.com for Stuffed Pork Chops.

I decided I didn’t feel much like pork chops for dinner, but that cornbread stuffing sounded pretty good. Plus, I have three gallons of cranberries I need to figure out how to use.

I picked up a Costco rotisserie chicken, made some glazed carrots and I had a mini-Thanksgiving in no time at all.

Cranberry Cornbread Stuffing | Alaska Knit Nat

I reheated the chicken in the oven 20 minutes before taking out the stuffing (or dressing in this case) and it made enough juice for some tasty gravy.

Ingredients:
2.5 cups crumbled cornbread
2 slices of bacon, chopped
1 Tbs. butter
2 celery ribs, chopped fine
1/2 onion, chopped fine
2 garlic cloves, minced
6 baby portobello mushrooms, sliced
1 Tbs. chopped parsley
1 Tbs. chopped sage
1 Tbs. chopped rosemary
1/4 cup dried or fresh cranberries
1/4 cup golden raisins
1/2 cup chicken stock
Salt and pepper to taste

Directions:
Preheat oven to 350 degrees.

In a heavy skillet, start browning the bacon. Add the celery, onion, garlic and mushrooms and cook till bacon is fully cooked, about 10 minutes. Add the parsley, sage, rosemary (sorry, no thyme) and cook another couple of minutes. Salt and pepper to taste.

In a bowl, toss together the cornbread, cranberries and raisins. Add the rest of the ingredients including the chicken stock and gently toss to combine.

Transfer to a casserole dish and top with little bits of butter.

Cover and bake for 50 minutes.
